Rainbow Waldorf salad

I loosely based this salad on a Waldorf salad. I was in a hurry and wanted something moist and tasty yet healthy. 

1 finely diced apple

1 finely diced stick of celery 

1/3 cup diced cucumber 

1 diced tomato

1 diced carrot

Handful of cashew nuts (or walnuts!) 

1/2 pomegranate (yes it was leftover) 

1 shallot diced 

Sadly no avocado but I’d have used it if I could

1/3 cup Greek breakfast yogurt 

1 teaspoon minced garlic
Mix and enjoy your creamy healthy nutritious salad. 
Perfect with chicken kebabs.  But I didn’t have any.
