Perfect Scones 

​500g flour 

60g butter

60g icing sugar

1 1/2 cups milk 

1/2 teaspoon salt

30g cream tartar

15g bicarb soda  

1 egg
200 degree oven

Sift dry ingredients. Rub in butter (I’ve done this using a good processor and it was fine)  Mix egg and milk then add to dry ingredients. Roll in one direction until 2cm thick.  Cut using scone cutter don’t twist,  just push and lift.  Brush with milk then bake on non stick flat tray or use baking paper if you like for 10 minutes. This recipe is a “secret” recipe that I listened to spoken verbally and wrote down. 

Serve with tea and lashings of jam and cream.
