Lunch for toddlers or well fed mums

You can just estimate with this recipe as it’s forgiving.

Salmon quiche in muffin tins.

  • a small tin of salmon
  • 4 eggs
  • 1/2 cup low fat grated cheese
  • 1/3 cup plain flour
  • 2 tablespoons olive oil
  • veggies if desired (see method)

I used a small tin of salmon in spring water drained and emptied into a large measuring jug. Added 4 eggs (60g), around a 1/2 cup low fat grated cheese (I buy grated and freeze it), around 1/3 cup plain flour, a good slurp (around 2 tablespoons) or olive oil then mix lightly. Spray 6 muffin tin holes with cooking spray. Grab a floret of broccoli and put some tiny bits in the bottom of the muffin pan (grated zucchini or/and carrot or even corn kernels would work too). Pour egg mix into muffin tin- bake around 15 minutes of 150 degrees until golden and set (don’t be tempted to cook hotter or they might burn). I didn’t add salt as salmon is already salty. Let cool. A similar quantity of ham/ bacon works well too instead of salmon.
